Vanilla Custard Cream Squares (Low- Carb)
Ingredients:
For the Crust:
- 1 1/2 cups almond flour
- 1/4 cup granulated erythritol (or another low-carb sweetener of your choice)
- 1/4 cup melted butter
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
For the Custard Filling:
- 4 large eggs
- 1/2 cup granulated erythritol (or another low-carb sweetener of your choice)
- 2 cups unsweetened almond milk
- 1/4 cup heavy cream
- 1 tablespoon vanilla extract
- 1/4 cup coconut flour (for thickening)
- Pinch of salt

Instructions:
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine the almond flour, granulated erythritol, melted butter, vanilla extract, and salt. Mix until well combined and the mixture resembles coarse crumbs.
- Press the mixture evenly into the bottom of an 8×8-inch baking pan lined with parchment paper.
- Bake for 10 minutes, then remove from the oven and let cool while you prepare the custard filling.
2. Prepare the Custard Filling:
- In a medium bowl, whisk together the eggs and granulated erythritol until smooth.
- In a medium saucepan, heat the unsweetened almond milk and heavy cream over medium heat until it starts to simmer. Do not let it boil.
- Slowly pour the hot almond milk mixture into the egg mixture, whisking continuously to prevent curdling.
- Stir in the vanilla extract, coconut flour, and a pinch of salt until the mixture is well combined and smooth.
- Pour the custard filling over the pre-baked crust.
3. Bake the Custard Squares:
- Bake in the preheated oven for 30-35 minutes, or until the custard is set and the top is golden brown.
- Remove from the oven and let it cool completely in the pan on a wire rack.
4. Serve:
- Once completely cooled, lift the custard squares out of the pan using the parchment paper. Cut into squares.
- You can refrigerate the squares for a few hours or overnight to enhance the texture and flavor.
Optional Topping:
- A sprinkle of powdered erythritol or a dollop of whipped cream can add a little extra sweetness and presentation.
