Totally Addicting Peanut Butter Banana Bread
*You will need a loaf pan (I hope that’s obvious)
Preheat Oven to 350 degrees
2 1/2 to 3 browning bananas
2 tablespoons water + 2 teaspoons flax seed
1/3 cup of butter (I have reduced this from 1/2 cup that I used to use)
3/4 cup sugar (I recommend reducing after first time making. I make mine with about 1/2 cup now)
1 teaspoon of vanilla extract
1/2 cup peanut butter
1/4 lactose free milk (I would recommend almond milk
2 cups rice flour
1 teaspoon baking powder
In a medium mixing bowl, vanilla, mix milk, butter, sugar, water+ flax seed together. Add bananas one at a time followed by peanut butter. Lastly, add all remaining ingredients. Spread into greased baking dish. Bake 60 minutes. Top should be a nice caramel color.
Cool and serve. I typically spread cream cheese or butter on banana bread if I need to jazz up my bread. But TRUST ME, this does not need it!
