The best Basic veggie soup

Ingredients:
- 2 tablespoons olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 zucchini, diced
- 1 cup green beans, chopped
- 1 can (14 oz) diced tomatoes (with juices)
- 4 cups vegetable broth
- 1 teaspoon salt (adjust to taste)
- ½ teaspoon black pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- Optional: 1 cup spinach or kale (added at the end)
Instructions:
- Heat oil in a large pot over medium heat. Add onion and garlic; sauté until softened (about 2–3 minutes).
- Add carrots and celery; cook for another 5 minutes, stirring occasionally.
- Stir in zucchini and green beans; cook for 2–3 minutes.
- Add diced tomatoes and vegetable broth. Season with salt, pepper, oregano, and basil.
- Bring to a boil, then reduce heat and simmer uncovered for about 20–25 minutes, until vegetables are tender.
- Optional: Stir in spinach or kale during the last 5 minutes of cooking.
- Taste and adjust seasoning if needed. Serve hot!
