The best Basic veggie soup

Ingredients:

  • 2 tablespoons olive oil
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 carrots, sliced
  • 2 celery stalks, sliced
  • 1 zucchini, diced
  • 1 cup green beans, chopped
  • 1 can (14 oz) diced tomatoes (with juices)
  • 4 cups vegetable broth
  • 1 teaspoon salt (adjust to taste)
  • ½ teaspoon black pepper
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Optional: 1 cup spinach or kale (added at the end)

Instructions:

  1. Heat oil in a large pot over medium heat. Add onion and garlic; sauté until softened (about 2–3 minutes).
  2. Add carrots and celery; cook for another 5 minutes, stirring occasionally.
  3. Stir in zucchini and green beans; cook for 2–3 minutes.
  4. Add diced tomatoes and vegetable broth. Season with salt, pepper, oregano, and basil.
  5. Bring to a boil, then reduce heat and simmer uncovered for about 20–25 minutes, until vegetables are tender.
  6. Optional: Stir in spinach or kale during the last 5 minutes of cooking.
  7. Taste and adjust seasoning if needed. Serve hot!
