Salad Ingredients
- 2 cups cooked chicken breast, chopped (grilled or pan-seared)
- 2 cups romaine lettuce, finely chopped
- 1 cup iceberg lettuce (optional, for crunch)
- ½ cup cherry tomatoes, chopped
- ¼ cup red onion, finely diced
- ½ cup cucumber or bell peppers, chopped
- ¼ cup cheddar or Mexican blend cheese (optional)
- ¼ cup corn (skip for keto)
- ¼ cup black beans (skip for keto)
🌶️ Tex-Mex Chicken Seasoning
- 1 tbsp olive oil
- ½ tsp paprika
- ½ tsp cumin
- ½ tsp chili powder
- ½ tsp garlic powder
- Salt & black pepper
- Squeeze of lime
Cook chicken with seasoning until golden, then chop.
🥑 Creamy Tex-Mex Dressing
- ¼ cup mayonnaise or Greek yogurt
- 1 tbsp sour cream
- 1 tbsp lime juice
- ½ tsp cumin
- ½ tsp garlic powder
- Salt to taste
- 1–2 tbsp water to thin
🔪 Method
- Season & cook chicken. Let rest, then chop into small pieces.
- In a large bowl, add all chopped veggies.
- Add chicken, beans/corn (if using), and cheese.
- Mix dressing ingredients separately.
- Pour dressing over salad and toss well.
- Taste and adjust salt, lime, or spice.
