TEX-MEX CHOPPED CHICKEN SALAD 

Salad Ingredients

  • 2 cups cooked chicken breast, chopped (grilled or pan-seared)
  • 2 cups romaine lettuce, finely chopped
  • 1 cup iceberg lettuce (optional, for crunch)
  • ½ cup cherry tomatoes, chopped
  • ¼ cup red onion, finely diced
  • ½ cup cucumber or bell peppers, chopped
  • ¼ cup cheddar or Mexican blend cheese (optional)
  • ¼ cup corn (skip for keto)
  • ¼ cup black beans (skip for keto)

🌶️ Tex-Mex Chicken Seasoning

  • 1 tbsp olive oil
  • ½ tsp paprika
  • ½ tsp cumin
  • ½ tsp chili powder
  • ½ tsp garlic powder
  • Salt & black pepper
  • Squeeze of lime

Cook chicken with seasoning until golden, then chop.


🥑 Creamy Tex-Mex Dressing

  • ¼ cup mayonnaise or Greek yogurt
  • 1 tbsp sour cream
  • 1 tbsp lime juice
  • ½ tsp cumin
  • ½ tsp garlic powder
  • Salt to taste
  • 1–2 tbsp water to thin

🔪 Method

  1. Season & cook chicken. Let rest, then chop into small pieces.
  2. In a large bowl, add all chopped veggies.
  3. Add chicken, beans/corn (if using), and cheese.
  4. Mix dressing ingredients separately.
  5. Pour dressing over salad and toss well.
  6. Taste and adjust salt, lime, or spice.

  • Crushed tortilla chips (not keto)
  • Hot sauce
  • Cilantro
