Taco Tater Tot Casserole
Ingredients:
- 1 lb ground beef
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning mix (or about 2-3 tablespoons homemade taco seasoning)
- 1 cup salsa
- 1 can (15 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 2 cups shredded cheddar cheese
- 1 bag (32 oz) frozen tater tots
- Optional toppings: chopped green onions, sour cream, diced tomatoes, sliced jalapeños, chopped cilantro

Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C).
- Cook the Beef: In a large skillet, cook the ground beef over medium heat until browned. Drain excess fat if needed. Add the chopped onion and minced garlic to the skillet, cooking until the onion is softened and translucent.
- Add Seasoning: Stir in the taco seasoning mix and cook for another minute until the spices are well combined with the beef.
- Combine Ingredients: Add the salsa, black beans, and corn to the skillet. Stir well to combine and let it cook for another 2-3 minutes to heat through.
