Taco Casserole
Ingredients:
For the Taco Meat:
- 1 lb ground beef or turkey
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning
- 1 can (14 oz) black beans, drained and rinsed
- 1 cup corn kernels (fresh, frozen, or canned)
- 1 cup salsa
For the Casserole Layers:
- 4 cups tortilla chips, crushed
- 2 cups shredded cheddar cheese
- 1 cup sour cream or Greek yogurt
- 1 cup diced tomatoes
- 1 cup shredded lettuce
- 1/2 cup sliced black olives (optional)
- Fresh cilantro, chopped (for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 350°F (175°C).
- Cook the Taco Meat:
- In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.
- Add chopped onion and minced garlic to the meat and cook until the onion is softened.
- Stir in the taco seasoning, black beans, corn, and salsa. Simmer for a few minutes until the mixture is heated through.
- Assemble the Casserole:
- In a 9×13-inch baking dish, spread a layer of crushed tortilla chips.
- Spoon half of the taco meat mixture over the chips.
- Sprinkle half of the shredded cheddar cheese over the meat.
- Add another layer of crushed tortilla chips.
- Spoon the remaining taco meat mixture over the chips.
- Spread the sour cream or Greek yogurt over the meat.
- Top with the diced tomatoes, shredded lettuce, and the rest of the shredded cheddar cheese.
- Bake in the Oven:
- Bake the casserole in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
- Garnish and Serve:
- Remove from the oven and let it cool for a few minutes.
- Garnish with sliced black olives (if using) and chopped fresh cilantro.
- Serve:
- Serve the taco casserole hot. You can also offer additional toppings such as extra salsa, guacamole, or diced avocado.
