Taco Casserole 

Ingredients:

For the Taco Meat:

  • 1 lb ground beef or turkey
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning
  • 1 can (14 oz) black beans, drained and rinsed
  • 1 cup corn kernels (fresh, frozen, or canned)
  • 1 cup salsa

For the Casserole Layers:

  • 4 cups tortilla chips, crushed
  • 2 cups shredded cheddar cheese
  • 1 cup sour cream or Greek yogurt
  • 1 cup diced tomatoes
  • 1 cup shredded lettuce
  • 1/2 cup sliced black olives (optional)
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 350°F (175°C).
  2. Cook the Taco Meat:
    • In a skillet over medium heat, cook the ground beef or turkey until browned. Drain excess fat if needed.
    • Add chopped onion and minced garlic to the meat and cook until the onion is softened.
    • Stir in the taco seasoning, black beans, corn, and salsa. Simmer for a few minutes until the mixture is heated through.
  3. Assemble the Casserole:
    • In a 9×13-inch baking dish, spread a layer of crushed tortilla chips.
    • Spoon half of the taco meat mixture over the chips.
    • Sprinkle half of the shredded cheddar cheese over the meat.
    • Add another layer of crushed tortilla chips.
    • Spoon the remaining taco meat mixture over the chips.
    • Spread the sour cream or Greek yogurt over the meat.
    • Top with the diced tomatoes, shredded lettuce, and the rest of the shredded cheddar cheese.
  4. Bake in the Oven:
    • Bake the casserole in the preheated oven for about 20-25 minutes or until the cheese is melted and bubbly.
  5. Garnish and Serve:
    • Remove from the oven and let it cool for a few minutes.
    • Garnish with sliced black olives (if using) and chopped fresh cilantro.
  6. Serve:
    • Serve the taco casserole hot. You can also offer additional toppings such as extra salsa, guacamole, or diced avocado.
