Spinach & Feta Egg Muffins

🥚 Ingredients (Makes 6-8 muffins):

  • 6 large eggs
  • 1/4 cup heavy cream (optional, for creaminess)
  • 1/2 cup chopped spinach (fresh or frozen & thawed)
  • 1/3 cup crumbled feta cheese
  • 1/4 cup shredded mozzarella or cheddar (optional)
  • 1/4 tsp garlic powder
  • Salt & pepper to taste
  • Olive oil or butter (for greasing muffin tin)

🔪 Instructions:

  1. Preheat oven to 180°C (350°F). Grease a muffin tin or use silicone muffin liners.
  2. In a bowl, whisk together eggs, cream, garlic powder, salt, and pepper.
  3. Stir in the spinach and feta cheese (plus any other cheese you’re using).
  4. Pour the mixture evenly into the muffin cups (fill about 3/4 full).
  5. Bake for 18–22 minutes, or until the muffins are set and lightly golden on top.
  6. Let them cool slightly, then pop them out and enjoy!

🔁 Tips:

  • You can add chopped onions, mushrooms, or cooked chicken for variety (still keto-friendly).
  • These store well in the fridge for up to 4 days — just reheat in the microwave or air fryer!
