Soft and Moist Banana Bread Recipe Without a Mixer
Ingredients:
– 3 overripe bananas, mashed
– 2 large eggs, at room temperature
– 1/2 cup vegetable oil or melted butter
– 3/4 cup brown sugar, for added moisture
– 1 teaspoon vanilla extract
– 1 1/2 cups all-purpose flour
– 1 teaspoon baking soda
– 1/2 teaspoon salt
– 1/2 teaspoon cinnamon (optional)
– 1/2 cup chopped nuts or chocolate chips (optional)
Directions:
1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
2. In a large mixing bowl, combine the mashed bananas, eggs, vegetable oil, brown sugar, and vanilla extract. Mix well.
3. Add the flour, baking soda, salt, and cinnamon to the wet ingredients. Stir until just combined. Do not overmix.
4. Fold in the chopped nuts or chocolate chips, if using.
5. Pour the batter into the prepared loaf pan and spread it out evenly.
6. Bake in the preheated oven for 50-60 minutes, or until a toothpick inserted into the center comes out clean.
7. Allow the banana bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
Tips:
– For extra moist banana bread, use melted butter instead of vegetable oil.
– Add a sprinkle of cinnamon on top of the batter before baking for a fragrant twist.
– Feel free to customize your banana bread by adding nuts, chocolate chips, or dried fruit to the batter.
