Smothered Chicken with Creamed Spinach Bacon And Mushrooms

Ingredients

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 2 tablespoons olive oil

For the Creamed Spinach:

  • 4 cups fresh spinach leaves
  • 4 slices bacon, chopped
  • 1 cup mushrooms, sliced
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper, to taste

Instructions

Preparing the Chicken:

  1. Season the Chicken:
    • Season the chicken breasts with salt, pepper, paprika, garlic powder, and onion powder on both sides.
  2. Cook the Chicken:
    • Heat olive oil in a large skillet over medium-high heat.
    • Add the chicken breasts and cook for 6-7 minutes on each side or until golden brown and cooked through.
    • Remove the chicken from the skillet and set aside.

Preparing the Creamed Spinach with Bacon and Mushrooms:

  1. Cook the Bacon:
    • In the same skillet, add the chopped bacon and cook until crispy.
    • Remove the bacon and set aside, leaving the bacon fat in the skillet.
  2. Sauté the Mushrooms:
    • Add the sliced mushrooms to the skillet and cook for 4-5 minutes until they start to brown.
  3. Add Garlic and Spinach:
    • Add the minced garlic and fresh spinach to the skillet.
    • Cook until the spinach is wilted, about 2-3 minutes.
  4. Add Cream and Cheese:
    • Pour in the heavy cream and bring to a simmer.
    • Stir in the grated Parmesan cheese until melted and combined.
    • Season with salt and pepper to taste.

Assembling the Dish:

  1. Combine Everything:
    • Add the cooked bacon back to the skillet.
    • Return the chicken breasts to the skillet, nestling them into the creamed spinach mixture.
    • Spoon some of the sauce over the chicken breasts.
  2. Simmer:
    • Let everything simmer together for a few minutes until the chicken is heated through and well-coated with the sauce.
  3. Serve:
    • Serve the smothered chicken with creamed spinach, bacon, and mushrooms immediately. Enjoy!

Tips:

  • Serve with mashed potatoes, rice, or pasta to soak up the delicious sauce.
  • You can substitute chicken thighs for chicken breasts if preferred.
  • For added flavor, sprinkle some shredded mozzarella cheese on top before simmering the final dish.
