it hard to cook for a spouse /family and stay on track . My kids asked for smoked sausage and homeade mashed potatoes. I probably could have fit some mashed potatoes in my day but didn’t want to deal with measuring all the ingredients, so I decided I can easily make myself a baked potato (topped with laughing cow cheese, plain Greek yogurt and green onions ) with some smoked turkey sausage
