Slow Cooker Ravioli Lasagna Recipe
Ingredients:
For the “Ravioli”:
- 2 cups shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1 cup almond flour
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- 1/4 tsp salt
For the Filling:
- 1 cup ricotta cheese
- 1 cup cooked ground beef or Italian sausage
- 1/4 cup grated Parmesan cheese
- 1 tsp dried basil or parsley
For the Sauce:
- 2 cups sugar-free marinara sauce
- 1/2 cup water
For Layering:
- 2 cups shredded mozzarella cheese
Instructions:
1. Prepare the “Ravioli Dough”:
- In a bowl, combine mozzarella and Parmesan cheese. Microwave for 1-2 minutes until melted and smooth.
- Stir in almond flour, garlic powder, Italian seasoning, and salt. Mix until dough forms.
- Roll out the dough between two sheets of parchment paper to about 1/8-inch thickness.
- Cut into small squares (to mimic ravioli). Set aside.
2. Make the Filling:
- In another bowl, mix ricotta cheese, cooked ground beef (or sausage), Parmesan, and dried basil/parsley.
3. Assemble the Ravioli:
- Take a square of dough, add a small amount of filling in the center, and top with another square. Press edges to seal.
4. Assemble in the Slow Cooker:
- Spread a thin layer of marinara sauce at the bottom of the slow cooker.
- Add a layer of ravioli.
- Pour marinara sauce on top, sprinkle shredded mozzarella cheese, and repeat layers until ingredients are used up.
5. Cook:
- Cover the slow cooker and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until cheese is bubbly and ravioli are tender.
6. Serve:
Let it rest for 10 minutes, garnish with fresh basil or parsley, and enjoy!
