Slow Cooker Ravioli Lasagna Recipe

Ingredients:

For the “Ravioli”:

  • 2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • 1/4 tsp salt

For the Filling:

  • 1 cup ricotta cheese
  • 1 cup cooked ground beef or Italian sausage
  • 1/4 cup grated Parmesan cheese
  • 1 tsp dried basil or parsley

For the Sauce:

  • 2 cups sugar-free marinara sauce
  • 1/2 cup water

For Layering:

  • 2 cups shredded mozzarella cheese

Instructions:

1. Prepare the “Ravioli Dough”:

  1. In a bowl, combine mozzarella and Parmesan cheese. Microwave for 1-2 minutes until melted and smooth.
  2. Stir in almond flour, garlic powder, Italian seasoning, and salt. Mix until dough forms.
  3. Roll out the dough between two sheets of parchment paper to about 1/8-inch thickness.
  4. Cut into small squares (to mimic ravioli). Set aside.

2. Make the Filling:

  1. In another bowl, mix ricotta cheese, cooked ground beef (or sausage), Parmesan, and dried basil/parsley.

3. Assemble the Ravioli:

  1. Take a square of dough, add a small amount of filling in the center, and top with another square. Press edges to seal.

4. Assemble in the Slow Cooker:

  1. Spread a thin layer of marinara sauce at the bottom of the slow cooker.
  2. Add a layer of ravioli.
  3. Pour marinara sauce on top, sprinkle shredded mozzarella cheese, and repeat layers until ingredients are used up.

5. Cook:

  1. Cover the slow cooker and cook on LOW for 4-5 hours or HIGH for 2-3 hours, until cheese is bubbly and ravioli are tender.

6. Serve:

Let it rest for 10 minutes, garnish with fresh basil or parsley, and enjoy!
