Slow Cooker Meatball Casserole

Ingredients:
- 1 lb (450g) ground beef (or turkey/chicken)
- 1/2 cup grated Parmesan cheese
- 1/2 cup shredded mozzarella cheese (for meatballs)
- 1 large egg
- 2 cloves garlic, minced
- 1 tsp Italian seasoning
- 1/2 tsp onion powder
- Salt and pepper to taste
- 1 cup sugar-free marinara sauce
- 1 cup shredded mozzarella cheese (for topping)
- Fresh basil or parsley for garnish (optional)
Instructions:
- Prepare the Meatballs:
- In a large bowl, mix together ground beef, Parmesan, mozzarella, egg, garlic, Italian seasoning, onion powder, salt, and pepper.
- Form the mixture into small meatballs (about 1.5 inches).
- Layer in Slow Cooker:
- Lightly grease the bottom of your slow cooker.
- Add a thin layer of marinara sauce.
- Place meatballs gently into the slow cooker.
- Pour the rest of the marinara sauce evenly over the meatballs.
- Cook:
- Cover and cook on low for 4–5 hours or high for 2–3 hours.
- Add Cheese:
- About 15 minutes before serving, sprinkle the shredded mozzarella on top.
- Cover again and let the cheese melt.
- Serve:
- Garnish with fresh basil or parsley.
- Serve hot — perfect as a meal on its own or with zoodles (zucchini noodles) for a full keto dinner!
Tips:
- You can add some chopped spinach or cooked mushrooms into the meat mixture for extra nutrition.
- Use ground pork mixed with beef for extra juicy meatballs!
