Slow Cooker Meatball Casserole

Ingredients:

  • 1 lb (450g) ground beef (or turkey/chicken)
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (for meatballs)
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 1/2 tsp onion powder
  • Salt and pepper to taste
  • 1 cup sugar-free marinara sauce
  • 1 cup shredded mozzarella cheese (for topping)
  • Fresh basil or parsley for garnish (optional)

Instructions:

  1. Prepare the Meatballs:
    • In a large bowl, mix together ground beef, Parmesan, mozzarella, egg, garlic, Italian seasoning, onion powder, salt, and pepper.
    • Form the mixture into small meatballs (about 1.5 inches).
  2. Layer in Slow Cooker:
    • Lightly grease the bottom of your slow cooker.
    • Add a thin layer of marinara sauce.
    • Place meatballs gently into the slow cooker.
    • Pour the rest of the marinara sauce evenly over the meatballs.
  3. Cook:
    • Cover and cook on low for 4–5 hours or high for 2–3 hours.
  4. Add Cheese:
    • About 15 minutes before serving, sprinkle the shredded mozzarella on top.
    • Cover again and let the cheese melt.
  5. Serve:
    • Garnish with fresh basil or parsley.
    • Serve hot — perfect as a meal on its own or with zoodles (zucchini noodles) for a full keto dinner!

Tips:

  • You can add some chopped spinach or cooked mushrooms into the meat mixture for extra nutrition.
  • Use ground pork mixed with beef for extra juicy meatballs!
