Ingredients:

  • 2 sponge fingers, cut into 4 pieces each
  • Juice of 1 small unwaxed lemon, plus a sprinkle of zest for garnish
  • 2 level tsp lemon curd
  • 200g plain quark
  • 2 x 115g pots fat-free, no-added-sugar lemon yogurt
  • 150g strawberries, hulled and 1 strawberry halved for decoration, the remaining strawberries thickly sliced
  • 2 Lemon Drizzle Hi-fi bars, finely chopped

Instructions:

  1. Take 2 tall-ish 250ml glasses and divide the sponge finger chunks evenly between them.
  2. In a bowl, combine the lemon juice and lemon curd, and drizzle the mixture over the sponge bases in the glasses.
  3. Mix the quark with the lemon yogurt, and then layer the yogurt mixture, sliced strawberries, and half of the chopped Hi-fi bars in the glasses, creating your desired arrangement, until the glasses are about halfway full.
  4. Sprinkle the remaining chopped Hi-fi bars on top of each glass, and garnish with the halved strawberries and a touch of lemon zest.
  5. Enjoy this delectable treat right away, or chill it for up to 4 hours to allow the flavors to mingle.

Note:

You can count this pud as 2½ Syns per serving if you have the Hi-fi bar as half of a Healthy Extra ‘b’ choice.
