Shrimp & Sausage Gumbo
Ingredients
- Roux:
- ¼ cup butter
- ¼ cup flour
- Gumbo:
- 1 onion, chopped
- 1 green bell pepper, chopped
- ½ each of red, yellow, orange bell pepper, chopped
- 3 stalks celery, chopped
- 1 tablespoon garlic, minced
- 3 bay leaves
- 4 links andouille sausage, cut in pieces
- 2 tablespoons cajun seasoning
- 2 tablespoons hot sauce
- 4 cups chicken broth
- 1 can diced tomatoes
- 1 ½ lbs shrimp – peeled, deveined, tail off
- Rice, cooked for serving
Instructions
FIRST STEP:
In a large pot melt butter and whisk in flour, cook until light brown
Add in onion, bell pepper, celery and cook until soft
SECOND STEP:
Stir in garlic and sausage, cook 2-3 minutes
Stir in cajun seasoning, hot sauce, chicken broth, tomatoes, and bay leaves
THIRD STEP:
Bring to a boil then reduce heat and simmer for 20-30 minutes
FOURTH STEP:
Add shrimp and cook until done
Serve over cooked rice
