Seafood Salad

Ingredients:

  • For the Salad:
    • 1/2 pound (225 grams) cooked shrimp, peeled and deveined
    • 1/2 pound (225 grams) cooked crab meat (or imitation crab meat, if preferred)
    • 1/2 pound (225 grams) cooked scallops, sliced in half if large
    • 2 cups mixed greens (such as lettuce, arugula, or spinach)
    • 1 cup cherry tomatoes, halved
    • 1/2 cucumber, sliced
    • 1/4 red onion, thinly sliced
    • 1 avocado, diced
    • 1/4 cup black olives, sliced (optional)
    • 1/4 cup capers (optional)
  • For the Dressing:
    • 1/4 cup olive oil
    • 2 tablespoons lemon juice (about 1 lemon)
    • 1 tablespoon Dijon mustard
    • 1 teaspoon honey or maple syrup
    • 1 clove garlic, minced
    • Salt and pepper to taste
    • 1 tablespoon chopped fresh parsley (optional)

Instructions:

  1. Prepare the Seafood:
    • If the shrimp, crab meat, and scallops are not already cooked, you need to cook them first. Boil the shrimp and scallops in lightly salted water until they are opaque and cooked through (about 3-4 minutes for shrimp and 2-3 minutes for scallops). Drain and cool. If using crab meat, ensure it’s fully cooked and break it into bite-sized pieces if needed.
  2. Prepare the Vegetables:
    • Wash and prepare the mixed greens. Slice the cherry tomatoes, cucumber, red onion, and avocado. If using, slice the black olives and capers.
  3. Make the Dressing:
    • In a small bowl or a jar with a lid, whisk together the olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until well combined. You can also shake it in a jar if that’s easier.
  4. Assemble the Salad:
    • In a large salad bowl, combine the mixed greens, cherry tomatoes, cucumber, red onion, and avocado.
    • Gently add the cooked seafood (shrimp, crab meat, and scallops).
    • If using, add the black olives and capers.
  5. Dress the Salad:
    • Drizzle the dressing over the salad just before serving. Toss gently to combine everything evenly.
  6. Garnish and Serve:
    • Sprinkle chopped fresh parsley over the salad if desired.
    • Serve immediately or chill in the refrigerator for up to an hour before serving.

Tips:

  • You can adjust the amount of seafood based on your preference or availability.
  • For a more filling salad, you can add cooked quinoa or a handful of croutons.
  • This salad pairs nicely with a light white wine or a sparkling water with lemon.
