Salted Caramel Overnight Oats

Ingredients (1 serving)
For the Oats:
- ½ cup rolled oats
- 1 tbsp chia seeds (for thickness and fiber)
- ½ cup almond milk (or any plant-based milk)
- ½ tsp vanilla extract
- 1 tbsp maple syrup or agave syrup
- Pinch of sea salt
For the Salted Caramel Sauce:
- 2 tbsp almond butter (or tahini for a nuttier flavor)
- 1 tbsp maple syrup
- 1 tbsp coconut cream (or plant-based milk for a thinner sauce)
- ¼ tsp sea salt
Instructions
- Prepare the Oats:
- In a jar or bowl, combine the oats, chia seeds, almond milk, vanilla extract, maple syrup, and a pinch of sea salt.
- Stir well, cover, and refrigerate overnight (or at least 4 hours).
- Make the Salted Caramel Sauce:
- In a small bowl, whisk together almond butter, maple syrup, coconut cream, and sea salt until smooth.
- Adjust consistency with more plant-based milk if needed.
- Assemble & Serve:
- In the morning, give the oats a good stir.
- Drizzle the salted caramel sauce over the oats.
- Optional toppings: Sliced bananas, crushed nuts, cacao nibs, or coconut flakes.
