Salted Caramel Overnight Oats

Ingredients (1 serving)

For the Oats:

  • ½ cup rolled oats
  • 1 tbsp chia seeds (for thickness and fiber)
  • ½ cup almond milk (or any plant-based milk)
  • ½ tsp vanilla extract
  • 1 tbsp maple syrup or agave syrup
  • Pinch of sea salt

For the Salted Caramel Sauce:

  • 2 tbsp almond butter (or tahini for a nuttier flavor)
  • 1 tbsp maple syrup
  • 1 tbsp coconut cream (or plant-based milk for a thinner sauce)
  • ¼ tsp sea salt

Instructions

  1. Prepare the Oats:
    • In a jar or bowl, combine the oats, chia seeds, almond milk, vanilla extract, maple syrup, and a pinch of sea salt.
    • Stir well, cover, and refrigerate overnight (or at least 4 hours).
  2. Make the Salted Caramel Sauce:
    • In a small bowl, whisk together almond butter, maple syrup, coconut cream, and sea salt until smooth.
    • Adjust consistency with more plant-based milk if needed.
  3. Assemble & Serve:
    • In the morning, give the oats a good stir.
    • Drizzle the salted caramel sauce over the oats.
    • Optional toppings: Sliced bananas, crushed nuts, cacao nibs, or coconut flakes.
