Salted Caramel Banana Bread

Ingredients:
For the Banana Bread:
- 1 ½ cups almond flour
- ¼ cup coconut flour
- 1 tsp baking powder
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp cinnamon
- ¼ tsp nutmeg (optional)
- 3 large eggs
- ½ cup unsweetened almond milk
- ½ cup granulated erythritol (or your preferred keto sweetener)
- ¼ cup melted coconut oil or butter
- 1 tsp vanilla extract
- 1 tsp banana extract (for that banana flavor without the carbs)
- ½ cup chopped pecans or walnuts (optional)
For the Salted Caramel Sauce:
- ½ cup unsalted butter
- ½ cup allulose or erythritol (allulose gives a better caramel texture)
- 1 tsp vanilla extract
- ½ tsp sea salt
- ¼ cup heavy cream
Instructions:
- Preheat the Oven:
Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper. - Prepare the Dry Ingredients:
In a bowl, whisk together almond flour, coconut flour, baking powder, baking soda, salt, cinnamon, and nutmeg. - Mix the Wet Ingredients:
In another bowl, beat the eggs, then add almond milk, melted coconut oil, sweetener, vanilla extract, and banana extract. Mix until smooth. - Combine Wet & Dry:
Gradually add the dry ingredients into the wet mixture. Stir until well combined. Fold in nuts if using. - Bake:
Pour the batter into the prepared loaf pan and smooth the top. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean. Let it cool completely. - Make the Salted Caramel:
While the bread cools, melt the butter in a saucepan over medium heat. Add the sweetener and stir until it’s fully dissolved and turns golden brown. Slowly whisk in the heavy cream (be careful, it may bubble). Add vanilla extract and sea salt. Simmer for a few minutes until thickened. - Assemble:
Drizzle the salted caramel sauce over the cooled banana bread. Slice and enjoy!
