ROTEL TACOS RECIPE

Ingredients:

  • 1 pound ground beef
  • 1 packet taco seasoning (or homemade taco seasoning)
  • 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
  • 1 cup shredded lettuce
  • 1 cup diced tomatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced onions
  • 1/4 cup chopped fresh cilantro (optional)
  • 8 taco shells or tortillas
  • Sour cream and salsa for serving (optional)

Instructions:

  1. Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  2. Season the Beef: Add the taco seasoning to the cooked ground beef according to the package instructions or your homemade seasoning recipe.
  3. Add Rotel: Stir in the can of Rotel diced tomatoes and green chilies (undrained) into the seasoned beef. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  4. Prepare Toppings: While the beef is cooking, prepare your taco toppings. Shred lettuce, dice tomatoes, shred cheese, chop onions, and gather other desired toppings.
  5. Warm Taco Shells: Heat the taco shells or tortillas according to the package instructions.
  6. Assemble Tacos: Spoon the seasoned ground beef mixture into each taco shell. Top with shredded lettuce, diced tomatoes, shredded cheese, diced onions, and cilantro.
  7. Serve: Serve the Rotel Tacos with optional toppings such as sour cream and salsa.
