ROTEL TACOS RECIPE
Ingredients:
- 1 pound ground beef
- 1 packet taco seasoning (or homemade taco seasoning)
- 1 can (10 ounces) Rotel diced tomatoes and green chilies, undrained
- 1 cup shredded lettuce
- 1 cup diced tomatoes
- 1 cup shredded cheddar cheese
- 1/2 cup diced onions
- 1/4 cup chopped fresh cilantro (optional)
- 8 taco shells or tortillas
- Sour cream and salsa for serving (optional)
Instructions:
- Cook Ground Beef: In a large skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
- Season the Beef: Add the taco seasoning to the cooked ground beef according to the package instructions or your homemade seasoning recipe.
- Add Rotel: Stir in the can of Rotel diced tomatoes and green chilies (undrained) into the seasoned beef. Cook for an additional 2-3 minutes, allowing the flavors to meld.
- Prepare Toppings: While the beef is cooking, prepare your taco toppings. Shred lettuce, dice tomatoes, shred cheese, chop onions, and gather other desired toppings.
- Warm Taco Shells: Heat the taco shells or tortillas according to the package instructions.
- Assemble Tacos: Spoon the seasoned ground beef mixture into each taco shell. Top with shredded lettuce, diced tomatoes, shredded cheese, diced onions, and cilantro.
- Serve: Serve the Rotel Tacos with optional toppings such as sour cream and salsa.
