Ingredients

  • 2 ripe bananas
  • 1 cup cottage cheese
  • 2 large eggs
  • 1/4 cup honey or maple syrup
  • 1 teaspoon vanilla extract

  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups whole wheat flour
  • 1 cup blueberries (fresh or frozen)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a mixing bowl, mash the bananas and then add cottage cheese, eggs, honey, and vanilla, mixing until well combined.
  3. In another bowl, combine baking soda, baking powder, salt, and flour.
  4. Gradually mix the dry ingredients into the wet ingredients until just combined.
  5. Fold in the blueberries gently.
  6. Pour the batter into the prepared loaf pan and smooth the top.
  7. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  8. Let cool before slicing and serving.

Notes

  • For added flavor, consider adding spices like cinnamon or nutmeg.
  • If using frozen blueberries, do not thaw them before adding to the batter.
