Pizza Muffins

Ingredients:
- 1 cup self-rising flour (or whole wheat for extra fiber)
- 1 cup non-fat Greek yogurt
- ½ cup reduced-fat shredded mozzarella cheese
- ¼ cup turkey pepperoni (chopped)
- ¼ cup pizza sauce (low-sugar)
- ½ tsp garlic powder
- ½ tsp Italian seasoning
- ¼ tsp salt
- ¼ tsp black pepper
- Cooking spray
Instructions:
- Preheat oven to 375°F (190°C). Lightly spray a muffin tin with cooking spray.
- In a bowl, mix flour and Greek yogurt until a dough forms. Knead lightly.
- Divide dough into 6-8 pieces and press into muffin cups.
- Add a spoonful of pizza sauce to each muffin cup.
- Sprinkle mozzarella cheese and turkey pepperoni on top.
- Sprinkle with garlic powder, Italian seasoning, salt, and pepper.
- Bake for 15-18 minutes or until golden brown and cheese is melted.
- Let cool for a few minutes before removing from the tin.
