Pizza Muffins

Ingredients:

  • 1 cup self-rising flour (or whole wheat for extra fiber)
  • 1 cup non-fat Greek yogurt
  • ½ cup reduced-fat shredded mozzarella cheese
  • ¼ cup turkey pepperoni (chopped)
  • ¼ cup pizza sauce (low-sugar)
  • ½ tsp garlic powder
  • ½ tsp Italian seasoning
  • ¼ tsp salt
  • ¼ tsp black pepper
  • Cooking spray

Instructions:

  1. Preheat oven to 375°F (190°C). Lightly spray a muffin tin with cooking spray.
  2. In a bowl, mix flour and Greek yogurt until a dough forms. Knead lightly.
  3. Divide dough into 6-8 pieces and press into muffin cups.
  4. Add a spoonful of pizza sauce to each muffin cup.
  5. Sprinkle mozzarella cheese and turkey pepperoni on top.
  6. Sprinkle with garlic powder, Italian seasoning, salt, and pepper.
  7. Bake for 15-18 minutes or until golden brown and cheese is melted.
  8. Let cool for a few minutes before removing from the tin.

  • Approx. 2-3 points per muffin (depends on ingredients used).
