Pistachio Pineapple Cake 

Ingredients:

  • For the Cake:
    • 1 box of pistachio cake mix (or use from scratch if preferred)
    • 3 large eggs
    • 1 cup water
    • 1/2 cup vegetable oil
    • 1/2 cup crushed pineapple (drained)
    • 1/2 cup chopped pistachios (optional, for added texture)
  • For the Frosting:
    • 8 oz cream cheese (softened)
    • 1/4 cup unsalted butter (softened)
    • 1 tsp vanilla extract
    • 2 cups powdered sugar
    • 1/4 cup chopped pistachios (for garnish)
    • 1-2 tbsp pineapple juice (optional, for a hint of tropical flavor)

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a 9-inch round or square cake pan.
  2. Prepare the Cake Batter: In a large mixing bowl, combine the pistachio cake mix, eggs, water, and vegetable oil. Mix well until smooth. Stir in the crushed pineapple (ensure it’s drained well to avoid excess moisture) and chopped pistachios (if using).
  3. Bake the Cake: Pour the batter into the prepared pan and spread it evenly. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool completely on a wire rack.
  4. Make the Frosting: In a medium bowl, beat together the softened cream cheese and butter until smooth. Add the vanilla extract, then gradually sift in the powdered sugar, mixing until light and fluffy. If you’d like a hint of pineapple flavor, add a little pineapple juice.
  5. Assemble the Cake: Once the cake has cooled, spread the frosting evenly over the top of the cake. Garnish with chopped pistachios for added crunch and decoration.
  6. Serve & Enjoy: Slice the cake and serve with a cup of tea or as a delightful dessert after a meal!
