1 box of yellow cake mix (or homemade cake batter)
1 cup pineapple juice (from canned pineapple or fresh)
½ cup vegetable oil
3 eggs
1 tsp vanilla extract
1 cup chopped pineapple (optional, for extra flavor and texture)
For the Glaze:
½ cup powdered sugar
2 tbsp pineapple juice
Instructions:
Preheat the oven to 350°F (175°C). Grease and flour a 9×13-inch baking pan.
Prepare the cake batter: In a large mixing bowl, combine the yellow cake mix, pineapple juice, vegetable oil, eggs, and vanilla extract. Use a hand mixer or whisk to mix everything until smooth and well combined.
Add pineapple (optional): If you want a chunkier texture, fold in the chopped pineapple.
Bake the cake: Pour the batter into the prepared baking pan and bake for 30–35 minutes or until a toothpick inserted into the center comes out clean.
Make the glaze: While the cake is cooling, prepare the glaze by whisking together the powdered sugar and pineapple juice until smooth.
Glaze the cake: Once the cake has cooled slightly (about 10–15 minutes), drizzle the glaze over the top of the cake. Let it soak in for a few minutes before serving.
Serve and enjoy: Slice the cake into squares and enjoy this moist and flavorful pineapple-infused treat!
