Pineapple Cucumber Salad
Ingredients:
1 large cucumber, thinly sliced
1 cup fresh pineapple, chopped
¼ cup red onion, finely diced
¼ cup fresh cilantro, chopped
1 jalapeño, finely diced (optional)
Juice of 1 lime
1 teaspoon honey or maple syrup
½ teaspoon chili powder
Salt and black pepper to taste
Directions:
In a large bowl, combine the thinly sliced cucumber, chopped pineapple, and finely diced red onion.
Add the chopped cilantro and jalapeño (if using) for extra flavor and heat.
In a small bowl, whisk together the lime juice, honey (or maple syrup), chili powder, salt, and black pepper.
Pour the dressing over the salad and toss gently to combine.
Let the salad sit for at least 10 minutes to allow the flavors to blend.
Serve chilled and enjoy as a refreshing side dish.
