Pecan Pie Cheesecake

For the crust:

  • 1 1/2 cups graham cracker crumbs (you can use reduced-fat graham crackers)
  • 2 tablespoons sugar or a sugar substitute
  • 3 tablespoons unsalted butter or a lower-fat alternative, melted

For the cheesecake filling:

  • 16 oz (2 cups) reduced-fat cream cheese, softened
  • 1/2 cup sugar or a sugar substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup non-fat Greek yogurt
  • 1/4 cup all-purpose flour

For the pecan pie topping:

  • 1 cup chopped pecans
  • 1/2 cup sugar or a sugar substitute
  • 1/2 cup light corn syrup or a sugar-free corn syrup substitute
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Preheat your oven to 325°F (163°C).
  2. In a mixing bowl, combine the graham cracker crumbs, sugar, and melted butter. Press this mixture into the bottom of a 9-inch springform pan to create the crust. You can use the back of a spoon to help flatten it evenly.
  3. In another mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Stir in the vanilla extract, Greek yogurt, and flour until everything is well combined.
  4. Pour the cheesecake filling over the prepared crust in the springform pan.
  5. In a separate bowl, whisk together the chopped pecans, sugar, corn syrup, eggs, vanilla extract, and a pinch of salt. This will be your pecan pie topping.
  6. Carefully pour the pecan pie topping over the cheesecake filling.
  7. Place the springform pan on a baking sheet to catch any potential spills and bake in the preheated oven for about 45-50 minutes, or until the cheesecake is set and the pecan pie topping is golden brown.
  8. Remove the cheesecake from the oven and let it cool completely. Then, refrigerate it for a few hours or overnight to allow it to firm up.
  9. Once the WW Pecan Pie Cheesecake has chilled, you can slice and serve it. Optionally, you can top each slice with a dollop of light whipped cream or a drizzle of sugar-free caramel sauce to enhance the flavor.
