Parmesan Meatloaf

Ingredients

  • 1 ½ lbs ground beef (or a mix of beef and pork)
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (Italian-style works best)
  • 1 egg
  • ½ cup milk
  • ¼ cup chopped parsley
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup marinara sauce
  • ½ cup shredded mozzarella cheese

Topping:

  • ¼ cup marinara sauce
  • ¼ cup grated Parmesan cheese

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Mix the ingredients – In a large bowl, combine the ground beef, Parmesan, breadcrumbs, egg, milk, parsley, garlic powder, onion powder, oregano, salt, and pepper. Mix until just combined.
  3. Shape the meatloaf into a loaf shape and place it on the prepared baking sheet.
  4. Add toppings – Spread ¼ cup marinara sauce over the top, then sprinkle Parmesan cheese.
  5. Bake for about 45 minutes, then remove from the oven and spread the remaining marinara sauce over the top. Sprinkle mozzarella cheese on top and bake for another 10-15 minutes, or until the internal temperature reaches 160°F (71°C).
