Parmesan-Crusted Roasted Potatoes

Ingredients:
1 lb baby potatoes, halved
1/4 cup grated Parmesan cheese
1/4 cup breadcrumbs (preferably panko)
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1/2 tsp paprika
Salt and pepper, to taste
Fresh parsley, chopped (optional, for garnish)
Instructions:
Preheat the oven: Preheat your oven to 425°F (220°C).
Prepare the potatoes: Halve the baby potatoes and place them in a large bowl. Drizzle with olive oil, and toss to coat.
Make the crust mixture: In a small bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, paprika, salt, and pepper.
Coat the potatoes: Sprinkle the Parmesan mixture over the potatoes and toss again until all potatoes are evenly coated.
Roast the potatoes: Arrange the coated potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25-30 minutes, flipping halfway through, until the potatoes are crispy and golden brown.
Serve: Remove from the oven and garnish with fresh parsley, if desired. Enjoy!
