Pancakes Fluffy and Delicious

Ingredients:

  • 1 ½ cups (190g) all-purpose flour
  • 3 ½ tsp baking powder
  • 1 tbsp sugar (optional, or more to taste)
  • ½ tsp salt
  • 1 ¼ cups (300ml) milk
  • 1 egg
  • 3 tbsp butter, melted (plus more for cooking)
  • 1 tsp vanilla extract (optional but tasty)

Instructions:

  1. Mix dry ingredients:
    In a large bowl, whisk together flour, baking powder, sugar, and salt.
  2. Mix wet ingredients:
    In another bowl, whisk the egg, milk, melted butter, and vanilla until well combined.
  3. Combine:
    Pour the wet ingredients into the dry and stir just until combined. Do not overmix—lumps are okay! Let the batter sit for 5–10 minutes for extra fluffiness.
  4. Cook:
    Heat a nonstick skillet or griddle over medium heat. Lightly grease with butter or oil. Pour ¼ cup of batter per pancake. When bubbles form on top and edges look set, flip and cook another 1–2 minutes until golden.
  5. Serve:
    Stack ’em up, drizzle with maple syrup, and top with fruit, whipped cream, or anything you like!
