Orzo with Roasted Butternut Squash and Spinach

Ingredients:

1 cup orzo pasta

2 cups butternut squash (cubed)

2 tbsp olive oil

3 cups fresh spinach

1/2 cup grated Parmesan cheese

1 tbsp fresh thyme (optional)

Salt and pepper to taste

Preparation:

Preheat oven to 400°F (200°C). Toss cubed butternut squash with olive oil, salt, and pepper, then roast for 20-25 minutes, until tender and lightly caramelized.
