Diabetic Orange Fluff (Sugar-Free)

Ingredients

  • 1 package sugar-free orange gelatin
  • 1 cup boiling water
  • ½ cup cold water
  • 1 cup unsweetened Greek yogurt (plain)
  • 1 cup sugar-free whipped topping (or homemade whipped cream with no sweetener)
  • ½ tsp orange extract (optional, boosts flavor)
  • Optional mix-ins:
    • ¼ cup mandarin orange segments, packed in water & well-drained (optional, use sparingly)
    • 2 tbsp unsweetened shredded coconut

Instructions

  1. Dissolve sugar-free gelatin in boiling water.
  2. Stir in cold water and let cool until slightly thickened (not set).
  3. Fold in Greek yogurt until smooth.
  4. Gently fold in whipped topping and any optional mix-ins.
  5. Chill 1–2 hours until fluffy and set.

  • Net carbs: ~2–3g
  • No added sugar
  • High protein → steadier blood sugar
