One Point Sheet Pan Pumpkin Bars

Ingredients:
- 1 can (15 oz) pumpkin puree
- 3 large eggs
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1/2 cup unsweetened applesauce
- 1 cup all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 teaspoons ground cinnamon
- 1/2 teaspoon ground ginger
- 1/4 teaspoon ground cloves
- 1/4 teaspoon nutmeg
- 1 teaspoon vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch sheet pan with parchment paper or lightly grease it.
- Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, eggs, granulated sugar, brown sugar, applesauce, and vanilla extract until smooth.
- Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
- Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
- Pour Batter: Spread the batter evenly in the prepared sheet pan.
- Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Cool & Cut: Let the bars cool in the pan on a wire rack before cutting into squares.
