One Point Sheet Pan Pumpkin Bars

Ingredients:

  • 1 can (15 oz) pumpkin puree
  • 3 large eggs
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup unsweetened applesauce
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cloves
  • 1/4 teaspoon nutmeg
  • 1 teaspoon vanilla extract

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a 9×13 inch sheet pan with parchment paper or lightly grease it.
  2. Mix Wet Ingredients: In a large bowl, whisk together the pumpkin puree, eggs, granulated sugar, brown sugar, applesauce, and vanilla extract until smooth.
  3. Combine Dry Ingredients: In a separate bowl, sift together the flour, baking powder, baking soda, salt, cinnamon, ginger, cloves, and nutmeg.
  4. Combine Mixtures: Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour Batter: Spread the batter evenly in the prepared sheet pan.
  6. Bake: Bake in the preheated oven for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool & Cut: Let the bars cool in the pan on a wire rack before cutting into squares.
