Oat and Chia Bread

Ingredients

2 cups rolled oats use glutenfree oats if preferred

3 tablespoons chia seeds

1 teaspoon baking powder

½ teaspoon salt

2 eggs

1 cup water or plantbased milk

2 tablespoons olive oil or melted coconut oil

Optional sunflower seeds pumpkin seeds or nuts for topping

Instructions

1 Preheat the oven to 180C 350F Grease or line a loaf pan with parchment paper

2 In a large bowl mix the rolled oats chia seeds baking powder and salt

3 In a separate small bowl combine the water with the chia seeds and let them sit for 510 minutes until they form a gellike consistency

4 In another bowl beat the eggs and add the olive oil or melted coconut oil

5 Pour the egg mixture and the chia gel into the dry ingredients stirring until you get a smooth and uniform batter If the mixture feels too dry add a bit more water or plantbased milk

6 Transfer the batter to the prepared loaf pan spreading it evenly Sprinkle sunflower seeds pumpkin seeds or nuts on top if desired

7 Bake for 4045 minutes or until a toothpick inserted in the center comes out clean

8 Remove from the oven and let the bread cool in the pan for a few minutes before transferring it to a wire rack to cool completely

9 Slice and enjoy
