Weight Watchers Chocolate Éclair Dessert (No-Bake)

Ingredients:

  • 1 box (1 oz) sugar-free instant vanilla pudding mix
  • 1 ½ cups cold skim milk
  • 1 tub (8 oz) fat-free whipped topping (like Cool Whip, thawed)
  • 1 box (about 7 oz) low-fat graham crackers
  • 1 container (15 oz) sugar-free chocolate frosting
    (or make a light chocolate glaze – see below)

Optional Homemade Light Chocolate Glaze:

  • 2 tbsp unsweetened cocoa powder
  • 1 cup powdered sugar substitute (like Swerve)
  • 2 tbsp skim milk (adjust for consistency)
  • 1 tsp vanilla extract

🧁 Directions:

  1. Prepare the pudding:
    In a large bowl, whisk together the pudding mix and skim milk for 2 minutes until thickened. Gently fold in the whipped topping until fully combined.
  2. Layer the dessert:
    • In a 9×13-inch dish, place a single layer of graham crackers on the bottom.
    • Spread half of the pudding mixture over the crackers.
    • Add another layer of graham crackers.
    • Spread the remaining pudding mixture.
    • Top with a final layer of graham crackers.
  3. Frosting:
    • If using premade sugar-free frosting, microwave it for 10–15 seconds to soften, then spread evenly over the top.
    • If using homemade glaze, whisk ingredients until smooth and pour over the top layer.
  4. Chill:
    • Cover and refrigerate for at least 6 hours or overnight. This helps the graham crackers soften and the flavors meld.
