Weight Watchers Chocolate Éclair Dessert (No-Bake)
Ingredients:
- 1 box (1 oz) sugar-free instant vanilla pudding mix
- 1 ½ cups cold skim milk
- 1 tub (8 oz) fat-free whipped topping (like Cool Whip, thawed)
- 1 box (about 7 oz) low-fat graham crackers
- 1 container (15 oz) sugar-free chocolate frosting
(or make a light chocolate glaze – see below)
Optional Homemade Light Chocolate Glaze:
- 2 tbsp unsweetened cocoa powder
- 1 cup powdered sugar substitute (like Swerve)
- 2 tbsp skim milk (adjust for consistency)
- 1 tsp vanilla extract

- Prepare the pudding:
In a large bowl, whisk together the pudding mix and skim milk for 2 minutes until thickened. Gently fold in the whipped topping until fully combined. - Layer the dessert:
- In a 9×13-inch dish, place a single layer of graham crackers on the bottom.
- Spread half of the pudding mixture over the crackers.
- Add another layer of graham crackers.
- Spread the remaining pudding mixture.
- Top with a final layer of graham crackers.
- Frosting:
- If using premade sugar-free frosting, microwave it for 10–15 seconds to soften, then spread evenly over the top.
- If using homemade glaze, whisk ingredients until smooth and pour over the top layer.
- Chill:
- Cover and refrigerate for at least 6 hours or overnight. This helps the graham crackers soften and the flavors meld.
