No Bake 2 Weight Watchers Points Strawberry Cheesecake

Ingredients:

For the Crust:

  • 1 cup crushed graham crackers (look for reduced-fat options)
  • 2 tablespoons melted light butter or margarine
  • 1 tablespoon granulated sugar substitute (like Splenda)

For the Filling:

  • 8 ounces fat-free cream cheese, softened
  • 1 cup fat-free Greek yogurt
  • 1/2 cup powdered sugar substitute (adjust to taste)
  • 1 teaspoon vanilla extract

For the Strawberry Topping:

  • 1 cup fresh strawberries, hulled and sliced
  • 1 tablespoon sugar substitute

Instructions:

  1. Prepare the Crust:
    • In a bowl, combine the crushed graham crackers, melted butter, and sugar substitute.
    • Press the mixture into the bottom of a pie or tart pan to form the crust. Place it in the refrigerator to set while you prepare the filling.
  2. Make the Filling:
    • In a mixing bowl, beat the softened cream cheese until smooth.
    • Add the Greek yogurt, powdered sugar substitute, and vanilla extract. Mix until well combined and smooth.
  3. Assemble the Cheesecake:
    • Take the crust out of the refrigerator and spread the cream cheese mixture evenly over the crust.
  4. Prepare the Strawberry Topping:
    • In a small bowl, toss the sliced strawberries with the sugar substitute. Let them sit for a few minutes to release their juices.
  5. Add the Topping:
    • Spread the strawberry mixture over the cream cheese layer.
  6. Chill:
    • Place the cheesecake in the refrigerator for at least 3-4 hours or until set.
  7. Serve:
    • Once set, slice and serve your delicious no-bake strawberry cheesecake.
