Mushroom-Stuffed Chicken Breasts:

Ingredients

– 2 large chicken breasts

– 1 tbsp olive oil

– 1/2 tsp salt

– 1/2 tsp black pepper

– 1 cup mixed mushrooms (button, cremini, shiitake)

– 2 cloves garlic, minced

– 1/4 cup grated cheddar cheese (optional)

Instructions

1. Preheat oven to 375°F (190°C).

2. In a skillet, sauté mushrooms and garlic in olive oil until tender.

3. Lay chicken breasts flat and make a horizontal incision to create a pocket.

4. Stuff each chicken breast with mushroom mixture and cheddar cheese (if using).

5. Season with salt, pepper, and your favorite herbs.

6. Bake for 30-35 minutes or until cooked through.

Prep Time: 15 minutes

Cook Time: 30-35 minutes

Total Time: 45-50 minutes
