Mum’s boiled fruit cake

Ingredients

  • 450 g canned pineapple crushed
  • 375 g mixed dried fruit
  • 125 g raisins
  • 1 cup sugar
  • 125 g butter
  • 1 tsp bicarbonate of soda
  • 1 tsp mixed spice
  • 1 tsp nutmeg
  • 1 cup self-raising flour
  • 2 eggs
  • 1 cup plain flour
  • 60 g pecans chopped optional

Method

  1. Combine the first 8 ingredients in a saucepan. Bring to the boil and simmer for approximately 5 minutes. Cool.
  2. To the cooled mixture, add the self-raising flour and 1 egg. Mix well. Add the plain flour and the other egg.
  3. Mix in the pecans.
  4. Place mixture into a well greased and floured 20cm x 20cm cake tin.
