Mouthwatering Motivation Keto Lasagna
Ingredients:
For the Meat Sauce:
- 1 lb (450g) ground beef
- 1/2 lb (225g) ground pork (optional, for added flavor and richness)
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 1 can (15 oz) crushed tomatoes (look for no added sugar)
- 2 tbsp tomato paste
- 1 cup (240ml) beef or chicken broth (unsweetened)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp dried thyme
- Salt and pepper, to taste
For the Cheese Mixture:
- 1 cup (240g) ricotta cheese
- 1 cup (120g) shredded mozzarella cheese
- 1/2 cup (60g) grated Parmesan cheese
- 1 large egg
- 1 tbsp chopped fresh parsley (or 1 tsp dried parsley)
For the Lasagna:
- 2 medium zucchinis, sliced into thin rounds (about 1/4 inch thick)
- 2 tbsp olive oil
- Extra shredded mozzarella cheese for topping

Instructions:
- Prepare the Meat Sauce:
- In a large skillet over medium heat, cook the ground beef and ground pork (if using) until browned, breaking it apart with a spoon.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent and softened.
- Stir in the crushed tomatoes, tomato paste, and beef or chicken broth. Add the oregano, basil, thyme, salt, and pepper.
- Bring the mixture to a simmer. Reduce the heat to low and let it cook for about 20-30 minutes, stirring occasionally, until the sauce thickens. Adjust seasoning if necessary.
- Prepare the Zucchini Slices:
- Preheat your oven to 375°F (190°C).
- Place the zucchini slices on a baking sheet and brush both sides lightly with olive oil.
- Bake in the preheated oven for about 10 minutes on each side, or until the slices are tender and slightly golden. This step helps to remove excess moisture from the zucchini.
- Prepare the Cheese Mixture:
- In a bowl, mix together the ricotta cheese, shredded mozzarella cheese, grated Parmesan cheese, egg, and parsley until well combined.
- Assemble the Lasagna:
- In a 9×13-inch (23×33 cm) baking dish, spread a thin layer of meat sauce on the bottom.
- Place a layer of zucchini slices over the sauce.
- Spread a layer of the cheese mixture over the zucchini.
- Add another layer of meat sauce, followed by another layer of zucchini slices.
- Repeat the layers, finishing with a final layer of meat sauce.
- Top with additional shredded mozzarella cheese.
- Bake:
- Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
- Let the lasagna cool for a few minutes before slicing and serving.
- Serve:
