Mouthwatering Lemon Bar Cookie Cups

Ingredients:

1 package sugar cookie dough

2 large eggs

1 cup powdered sugar

1/4 cup all-purpose flour

2 tbsp lemon juice

1 tsp lemon zest

1/2 tsp baking powder

Preparation:

Preheat oven to 350°F (175°C). Grease a muffin tin or line with paper liners.

Press a tablespoon of sugar cookie dough into the bottom of each muffin cup, forming a base.

In a bowl, whisk together eggs, powdered sugar, flour, lemon juice, lemon zest, and baking powder until smooth.

Pour the lemon mixture over the cookie dough in each muffin cup, filling about 2/3 full.

Bake for 18-20 minutes, or until the edges are golden and the centers are set.
