MOIST ORANGE CARROT PUDDING
INGREDIENTS:
A cup of sugar
A cup of vegetable oil
Four eggs
A Fresh Cup Of Orange Juice
two cups of wheat flour
Just a teaspoon of baking powder
One teaspoon of baking soda.
A teaspoon of cinnamon powder
A pinch of salt
Grind of an Orange
Chopped Walnuts (optional, to taste)
INSTRUCTIONS:
STEP 1: PREPARE THE MIX
– Preheat the oven to 180°C (350°F). Grease and flour a pudding mold.
– In a large bowl, beat the sugar and vegetable oil until well combined. Add the eggs one by one, beating well after each addition.
STEP 2: INSERT DRY INGREDIENTS
– Add the juice of orange, grated orange and grated carrots to the egg mixture. Mix it up well.
– In another bowl, combine flour, baking powder, baking soda, cinnamon and salt. Add this dry mixture to the wet mixture and stir until everything is well incorporated. Add chopped nuts if you wish.
STEP 3: BAKING
– Pour the mixture into the prepared mold and bake for 45-50 minutes, or until a chopstick inserted in the center comes out clean.
– Let the pudding cool in the mold for 10 minutes before de-molding and cooling completely on a grid.
