Mini Pineapple Upside Down Cakes – Weight Watchers Friendly

Ingredients:

1 box yellow cake mix
Substitute pineapple juice for water.
1 egg
11 rings of canned pineapple
11 maraschino cherries
11 tablespoons light butter or margarine (1 per ramekin)
22 tablespoons brown sugar (2 tablespoons per ramekin)
Instructions:

Prepare the cake mix as per the directions on the box, replacing water with pineapple juice. Add one egg to the mix.
Grease your ramekins with cooking spray.
Place 1 tablespoon of melted light butter at the bottom of each ramekin, then add 2 tablespoons of brown sugar.
Put a pineapple slice on top of the butter and sugar mixture, and place a maraschino cherry in the center of the pineapple.
Pour the cake batter into each ramekin, filling it to the top.
Bake in your air fryer at 350°F for approximately 16 minutes or until a toothpick inserted into the cake comes out clean.
