MINCE AND TATTIES

Ingredients:

  • 500g minced beef
  • 1 onion, finely chopped
  • 2 carrots, diced
  • 2 cloves of garlic, minced
  • 2 tablespoons tomato paste
  • 500ml beef stock
  • 2 tablespoons Worcestershire sauce
  • Salt and pepper to taste
  • 1kg potatoes, peeled and chopped
  • 50g butter
  • 100ml milk
  • Salt and pepper to taste

Instructions:

For the Mince:

  1. Heat some oil in a large pan over medium heat. Add the onions and carrots and cook until they start to soften, around 5 minutes.
  2. Add the minced garlic and cook for another minute.
  3. Add the minced beef to the pan and cook until browned, breaking it up with a spoon as it cooks.
  4. Stir in the tomato paste, beef stock, and Worcestershire sauce. Season with salt and pepper to taste.
  5. Bring the mixture to a simmer and let it cook uncovered for about 20-30 minutes until the sauce has thickened. Stir occasionally.

For the Tatties (Potatoes):

  1. While the mince is cooking, place the chopped potatoes in a large pot and cover them with cold water. Add a pinch of salt.
  2. Bring the pot to a boil and cook the potatoes until they are fork-tender, usually around 15-20 minutes.
  3. Drain the potatoes and return them to the pot.
  4. Add the butter and milk to the pot with the potatoes. Mash everything together until smooth and creamy. Season with salt and pepper to taste.

To Serve:

  1. Spoon the mince onto plates or bowls.
  2. Serve the mashed potatoes alongside the mince.
  3. Enjoy your hearty Mince and Tatties!
