Mediterranean chicken salad – 2 points on Weight Watchers

Ingredients:

  • 1 cup cooked, shredded chicken breast (about 140g)
  • 1 cup chopped cucumbers
  • 1 cup cherry tomatoes, halved
  • 1/4 cup sliced Kalamata olives
  • 1/4 cup diced red onion
  • 1/4 cup crumbled feta cheese (use reduced-fat if desired)
  • 1 tablespoon olive oil
  • 1 tablespoon lemon juice
  • 1/2 teaspoon dried oregano
  • Salt and pepper to taste

Instructions:

  1. In a large bowl, combine the shredded chicken, cucumbers, cherry tomatoes, olives, red onion, and feta cheese.
  2. In a small bowl, whisk together the olive oil, lemon juice, dried oregano, salt, and pepper.
  3. Pour the dressing over the salad and toss to coat evenly.
  4. Serve chilled or at room temperature.
