Mayo Parmesan Chicken

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1/2 cup mayonnaise
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon dried Italian seasoning (optional)
  • Salt and pepper to taste
  • 1/4 cup breadcrumbs (optional for extra crunch)
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C).
    • Lightly grease a baking dish or line it with parchment paper.
  2. Prepare the Chicken:
    • Pat the chicken breasts dry with paper towels.
    • Season both sides of the chicken with salt and pepper.
  3. Mix the Mayo and Parmesan:
    • In a small bowl, combine the mayonnaise, grated Parmesan cheese, garlic powder, onion powder, and Italian seasoning. Mix well until smooth.
  4. Coat the Chicken:
    • Spread the mayo-Parmesan mixture evenly over the top of each chicken breast.
  5. Add Breadcrumbs (Optional):
    • If you prefer a crispy topping, sprinkle breadcrumbs over the mayo-Parmesan coating.
  6. Bake the Chicken:
    • Place the coated chicken breasts in the prepared baking dish.
    • Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and the topping is golden and bubbly. The internal temperature should reach 165°F (74°C).
  7. Garnish and Serve:
    • Remove the chicken from the oven and let it rest for a few minutes.
    • Garnish with chopped fresh parsley before serving.

Serving Suggestions:

  • Serve the Mayo Parmesan Chicken with a side of roasted vegetables, mashed potatoes, or a fresh green salad.
