Mashed Potato Muffins

Ingredients:

  • 2 cups mashed potatoes (leftover or freshly made)
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese (or any cheese you like)
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup milk (or cream)
  • 1/4 cup chopped green onions (optional)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Cooking spray or butter for greasing
  • Optional toppings: extra cheese, bacon bits, herbs

Instructions:

  1. Preheat Oven:
    • Preheat to 375°F (190°C).
    • Grease a muffin tin with cooking spray or butter.
  2. Mix Ingredients:
    • In a large bowl, combine mashed potatoes, eggs, cheeses, milk, green onions, garlic powder, salt, and pepper.
    • Mix until well blended.
  3. Scoop Into Muffin Tin:
    • Divide the mixture evenly into the muffin cups (about 3/4 full).
    • Press down slightly with the back of a spoon.
  4. Bake:
    • Bake for 20–25 minutes, or until the tops are golden and slightly crispy.
  5. Cool & Serve:
    • Let cool for 5 minutes before removing from the pan.
    • Serve warm with sour cream, extra cheese, or hot sauce if desired.
