Mashed Potato Muffins

Ingredients:
- 2 cups mashed potatoes (leftover or freshly made)
- 2 large eggs
- 1/2 cup shredded cheddar cheese (or any cheese you like)
- 1/4 cup grated Parmesan cheese
- 1/4 cup milk (or cream)
- 1/4 cup chopped green onions (optional)
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Cooking spray or butter for greasing
- Optional toppings: extra cheese, bacon bits, herbs

Instructions:
- Preheat Oven:
- Preheat to 375°F (190°C).
- Grease a muffin tin with cooking spray or butter.
- Mix Ingredients:
- In a large bowl, combine mashed potatoes, eggs, cheeses, milk, green onions, garlic powder, salt, and pepper.
- Mix until well blended.
- Scoop Into Muffin Tin:
- Divide the mixture evenly into the muffin cups (about 3/4 full).
- Press down slightly with the back of a spoon.
- Bake:
- Bake for 20–25 minutes, or until the tops are golden and slightly crispy.
- Cool & Serve:
- Let cool for 5 minutes before removing from the pan.
- Serve warm with sour cream, extra cheese, or hot sauce if desired.
