LOW CARB ENCHILADA MEATBALLS

INGREDIENTS

+Meatballs:

° 1 lb ground beef

° 1 egg

° 1/4 cup grated real cheddar cheese

° 2 tbsp taco seasoning

° 1/2 teaspoon onion powder

° 1/2 teaspoon of salt

° 1/4 teaspoon black pepper

+sauce

° 1/4 cup enchilada sauce (3g sugar or less)

*DIRECTIONS:

+Meatballs:

* 1) Preheat the oven to 400.

*2) Add all meatball ingredients to a large bowl and mix well until combined.

* 3) Shape about 15 meatballs and place on a foil lined baking sheet.

*4) Bake for 25 minutes or until cooked through.

Assemble Casserole:

* 1) Preheat the oven to 350.

*2) Pour 1/4 cup of enchilada sauce into the bottom of a small baking dish or cast iron skillet.

*3) Place cooked meatballs in dish and top with remaining enchilada sauce. Garnish with grated cheese. 

* 4) Bake for 15 minutes or until cheese is melted and bubbly.
