Low Carb Dill Pickle Chicken Fritters

Ingredients

  • 2 cups of cooked chicken, finely chopped or shredded
  • 1/2 cup almond flour
  • 1/2 cup grated Parmesan cheese
  • 1 large egg, beaten
  • 1/3 cup dill pickle juice
  • 1/4 cup dill pickles, finely diced
  • 1 tablespoon fresh dill, minced
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil for frying
    Directions
  1. In your trusty mixing bowl, combine the chicken, almond flour, and Parmesan cheese. Stir in that beaten egg, pickle juice, diced pickles, and fresh dill until everything is well mixed and cozy.
