Low Carb Creamy Garlic Chicken

This dish is all about flavor and comfort — tender chicken seared to golden perfection, then bathed in a silky, garlicky cream sauce that clings to every bite. It’s indulgent without being heavy on carbs, and it comes together in under 30 minutes.
Ingredients:
- 4 boneless, skinless chicken breasts (or thighs)
- Salt and pepper, to taste
- 1 teaspoon garlic powder
- 1 tablespoon olive oil (or butter)
- 4 cloves garlic, minced (or more if you love garlic!)
- 1 cup heavy cream
- ½ cup chicken broth (low sodium)
- ½ cup grated Parmesan cheese
- 1 teaspoon Italian seasoning (optional)
- Fresh parsley, for garnish
Instructions:
1. Season and Sear the Chicken:
Pat the chicken dry and season both sides with salt, pepper, and garlic powder. Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken and sear for 4–5 minutes per side, until golden and nearly cooked through. Remove from skillet and set aside.
2. Make the Garlic Cream Sauce:
In the same skillet, lower the heat to medium and add the minced garlic. Sauté for 30 seconds to 1 minute, just until fragrant (don’t let it burn). Pour in the chicken broth and scrape up any browned bits from the bottom of the pan — this adds great flavor.
Stir in the heavy cream and Parmesan cheese. Let it simmer for 3–4 minutes, stirring occasionally, until the sauce thickens slightly. Add Italian seasoning if using.
3. Finish Cooking the Chicken:
Return the chicken to the skillet, nestling it into the sauce. Simmer for another 5–7 minutes, or until the chicken is fully cooked (165°F internal temp) and the sauce is thick and creamy.
4. Serve and Garnish:
Sprinkle with freshly chopped parsley before serving. Spoon the luscious garlic cream sauce over the chicken for maximum flavor in every bite.
