Lightened-Up Truffled Pineapple Cake
Indulge in the delightful flavors of pineapple and white chocolate with this Weight Watchers-friendly version of truffled pineapple cake.
Ingredients:
For the Dough:
- 2 eggs
- 1 tablespoon light margarine
- 1 cup granulated sugar substitute
- 1 and 1/4 cups whole wheat flour
- 1 tablespoon baking powder (or Royal Baking Powder)
For the Filling:
- 1 small pineapple
- Sugar substitute for cooking the pineapple
- 500 grams of good quality white chocolate (make sure it’s not divided or hydrogenated)
- 1 can of light milk cream
- 1 teaspoon pineapple essence
For the Topping:
- 1 cup egg whites
- 1 cup sugar substitute
- Vanilla drops (to taste)
Instructions:
For the Dough:
- Beat the eggs, light margarine, and sugar substitute until well combined. Add the warm milk and mix a little more. Turn off the mixer.
- Gradually add the sifted whole wheat flour and baking powder. Mix until the batter is smooth. Pour the batter into a round mold (20 cm) that has been lightly greased and floured. Bake until it’s lightly browned.
For the Filling:
- Prepare the pineapple by cooking it with a sugar substitute until it’s sweet and tender. Do not add water. Cook over low heat, stirring until completely combined. This should take about 10 minutes. Let it cool, then strain it to eliminate the liquid. Discard the liquid and reserve the cooked pineapple.
- Melt the white chocolate with the cream and add the pineapple essence.
- Combine everything and then add the reserved pineapple. Freeze until it has a consistent texture.
For the Topping:
- Place the egg whites and sugar substitute in a saucepan. Heat over low heat, stirring quickly, but do not let the egg whites cook. Beat the mixture in an electric mixer with vanilla drops until it’s consistent enough to work with a pastry bag.
Assembly:
- Wait for the cake dough to cool and cut it into 2 halves. Moisten each with a syrup of your choice (try using a mix of milk and sugar substitute). In the same pan in which the cake was baked, place half of the dough.
- Pour all the filling and cover with the other half. Place it in the refrigerator for approximately 4 hours to firm up. Unmold and cover with the meringue.
- Decorate as desired, and enjoy your lightened-up truffled pineapple cake!
