  • 1 cup pecans, chopped

Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together the whole wheat pastry flour, cornstarch, and salt.
  3. In a large bowl, cream together the butter (or light butter alternative), granulated sugar substitute, and vanilla extract until light and fluffy.
  4. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  5. Stir in the chopped pecans and toffee bits (ensure it’s sugar-free or low-sugar).
  6. Roll the dough into 1 1/2 inch balls and place them onto the prepared baking sheet, spacing them about 2 inches apart.
