I made two sets of these potatoes over the weekend, on Friday I made them with lemon, honey & garlic then on Saturday I swapped the garlic for black pepper as I was going on a bottomless brunch & didn’t want garlic breath all day
I very much winged it with both sets of potatoes but this is a basic run down of what I did…
– I peeled Maris Piper potatoes & cut into even-ish chunks then par boiled in boiling water for roughly 10 minutes until fork tender
– Whilst the potatoes were cooking I preheated the oven to 200c fan
– When the potatoes were par boiled I drained them, put them back into the saucepan, gave them a good shake then popped a plate on top of the pan to allow them to steam
– While the potatoes were steaming I added a healthy glug of vegetable oil to a metal oven tray & popped that in the oven to preheat
– After about 5-10 mins I added the potatoes to the hot oil tray then used a soup spoon to baste every potato making sure each one was covered in oil
– Turn and baste every 20 minutes, I tend to cook these potatoes for the best part of an hour
– Whilst they’re cooking you can make your glaze. I grated the zest of a lemon into a small bowl along with the juice of the lemon, two grated garlic cloves and a few tablespoons of honey, along with some salt and pepper
– I added the glaze to the potatoes for the last 10 minutes of cooking
I did not count calories for this and also do not wish to know the calorie content either
