Lemon Chicken from Annie’s Eats

Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 3 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1/2 cup chicken broth
  • 2 tablespoons butter
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions:

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
  2. Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts. Cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Once cooked, remove the chicken from the pan and set it aside.
  3. Make the Lemon Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the lemon zest and juice, followed by the chicken broth. Stir to combine and scrape up any browned bits from the bottom of the pan.
  4. Add Butter and Finish: Bring the sauce to a simmer and cook for 3-4 minutes to reduce slightly. Stir in the butter and let it melt into the sauce, creating a smooth, silky texture.
  5. Serve: Return the chicken breasts to the skillet and spoon some of the lemon sauce over the top. Let the chicken absorb the flavors for a couple of minutes. Garnish with fresh parsley before serving.
