Lemon Chicken from Annie’s Eats

Ingredients:
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- 3 cloves garlic, minced
- Zest and juice of 1 lemon
- 1/2 cup chicken broth
- 2 tablespoons butter
- 1 tablespoon fresh parsley, chopped (for garnish)
Instructions:
- Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides.
- Cook the Chicken: Heat olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts. Cook for about 5-7 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F). Once cooked, remove the chicken from the pan and set it aside.
- Make the Lemon Sauce: In the same skillet, add the minced garlic and sauté for 1 minute until fragrant. Add the lemon zest and juice, followed by the chicken broth. Stir to combine and scrape up any browned bits from the bottom of the pan.
- Add Butter and Finish: Bring the sauce to a simmer and cook for 3-4 minutes to reduce slightly. Stir in the butter and let it melt into the sauce, creating a smooth, silky texture.
- Serve: Return the chicken breasts to the skillet and spoon some of the lemon sauce over the top. Let the chicken absorb the flavors for a couple of minutes. Garnish with fresh parsley before serving.
